Bacon and Onion Focaccia

On Thursdays we do 3 different Farmer's Markets all over Chicago. In the morning we go to the farmer's markets in Hyde Park and Willis Tower. In the evening you can find us in the Lowline market under the Southport brown line stop. We promptly make our preparations early on in the week.
The Bacon and Onion Focaccia is in all its glory the most amazing thing I have ever had. The round focaccia is sized for individual consumption and trust me, you wouldn't want to share anyway. As you bite it, you immediately feel your teeth sink into the soft but perfectly crusty bread and toasted sesame seeds. Your next bite will be the seasoned bacon and soft onions on a bed of greens topped with caramelized cheese. To all you bacon loves, this is a slice of heaven you need to try.
