Apples and Asparagus

Have you ever tried peeling so many apples? What's your technique? Do you peel it in a way so the skin stays in one piece or do you just peel away in any direction? Today I had to peel 8 lbs of apples and while I was trying to peel it in one stroke, didn't happen. But it's fine because apples taste good however you peel them!

So what are we gonna do with these apples? Apple pie? Yes but even better, MINI apple pies. :D

Mini pastries are my favorite because they're just so cute and so delicious, plus "quantity control". We're baking up mini apples pies so be on the look out for that.

We also just made asparagus and brie quiches for one of our customers. I love asparagus but I've never had it with cheese before! What makes it even better is that it's brie cheese and I love how the cheese will get all gooey after baking. We're so excited to try it after it comes out of the oven.
